Growing Healthier Food -- Increasing Antioxidant Levels through Organic Farming and Food Processing

Science is digging deeper into the roots of food quality. Thousands of scientists worldwide are probing the secrets of antioxidants in food. Why do plants produce them? What factors govern their levels? How do they promote human health? These natural plant chemicals help prevent or reduce tissue damage in cells caused by free radicals. Free radicals are oxygen and nitrogen-based molecules with unpaired electrons that are generated by several of the body’s metabolic processes. Antioxidants inhibit damaging reactions within human cells by providing the positively charged atoms needed to neutralize free radicals. They bring stability to cells in the throes of inner chaos.

Plants produce more than 50,000 “secondary plant metabolites” (SPMs) in response to stresses in the environment. Some 4,000 of these SPMs are polyphenol flavonoids and many of these are antioxidants. Plants provide essentially all dietary sources of antioxidants. Antioxidants in milk and meat are initially from the plant-based feed consumed by farm animals.

By lessening free radical damage in human tissues, antioxidants reduce inflammation and can lessen joint and muscle pain. Through this mechanism, antioxidants can play a role in promoting cardiovascular health, lessen the risk and severity of neurodegenerative diseases like Alzhiemer’s and Parkinston’s disease, and in general, help slow the aging process.

The former US Vice President delivered a dramatic warning about the threat of global warming as he collected his prize at a glittering ceremony in Oslo.

Rajendra Pachauri, chair of the IPCC, collected the award on behalf of the panel and paid tribute to the thousands of scientists who have contributed to its work.

Gasping For Air? Put Down That Spray Cleaner

Until recently, people who experienced respiratory problems from household use of spray cleaners had
no facts to back up their claims of shortness of breath or wheezing. That has changed.
Previous data linking health risks to spray cleaners was based on occupational users such as custodians.
Using cleaning products all day, every day has been linked to an array of illnesses. But now results of a
new epidemiological study are in which are relevant to anyone who spritzes the bathroom mirror with
window cleaner.
This European study tracked 3,500 people who had no history of asthma symptoms. After an average of
nine years, the frequency of each person’s cleaning product use was determined and factored against
his or her current health. The overall conclusions may leave you aghast. Or gasping.
Using a spray cleaner only once a week increased the risk of developing asthma by almost 50 percent.
Among those who used sprays more frequently, four times a week, the risk of asthma was nearly
doubled. The strongest effect was seen from the use of glass cleaners, air fresheners and furniture
cleaners. Although women were found to be vulnerable to developing this respiratory disorder the study
noted that men had an even higher likelihood of developing asthma when using spray cleaners.
The study’s lead author, Jan-Paul Zock of the Center for Research in Environmental Epidemiology at the
Municipal Institute of Medical Research in Barcelona, Spain, estimates that exposure to the chemicals
found in cleaning products may account for one in seven adult onset asthma cases.
